From food insecurity to rising rates of obesity and chronic disease, Arkansas faces a number of challenges related to the food we eat. Fortunately, there are also a growing number of efforts underway to address those challenges and build a healthier future for our state — beginning with our children. One group doing interesting work in Arkansas is Fayetteville-based Apple Seeds Inc, a nonprofit organization that works to ignite a lifelong love of fresh and nutritious food through its teaching farms and educational programs.
